Peach Cobbler Pancakes

Sometimes you’re forced to get creative. Yesterday morning the kids wanted pancakes – easy enough, right? Normally, yes. However, yesterday we were missing one critical accompaniment: Syrup. Luckily we have vast quantities of fresh local produce here at the beach house to mull over. What to do, what to do….

Eureka! Peach Syrup!

Here’s what you need:
2 tbsp butter
1 peach, peeled & cubed
1/2 cup peach preserves
1/8 cup water

Here’s how you make it:
Melt the butter in a medium saucepan over medium heat. Add the peach and sauté for about five minutes, stirring often. Add the preserves and the water, whisking to combine. Reduce heat and then gently simmer for 10-15 minutes, whisking occasionally. Remove from the stove and pour into a heat-proof pitcher. Serve warm with pancakes (or ice cream).
What we ended up with was breakfast that tasted almost exactly like peach cobbler. “How bad can that be?” as Ina Garten would say.
